Sweet Potato Pancakes!

With a few extra sweet potatoes & a need for a good snack for Harrison other than crackers, I decided to take advantage of his afternoon nap & whip up some sweet potato pancakes.  I can’t remember where I snagged this recipe, it was so long ago…probably Wholesome Baby Food?

I skinned, cubed, steamed, pureed a sweet potato into my Beaba Cook & then let it sit in the steam a little longer to make sure it was very easy to work with.

  • 2 tbsp unsalted butter, melted  (I used salted because it’s all we had & they were tasty)
  • 1/2 cup cooked sweet potatoes, mashed (I had them practically pureed rather than mashed)
  • 1 egg
  • 1/3 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 cup milk (or more)

  1. Mix sweet potatoes in a mixing bowl with egg. Stir in the flour and add the baking powder. Add up to 1/3 cup of milk while stirring. Stir in 1 tbsp butter.
  2. The mixture should have the consistency of thick, lumpy sauce like an “instant” pancake mix.
  3. Place a non-stick or heavy iron skillet over medium heat on top of the stove and add 1/2 tsp butter.

Then cook it just as you would a regular pancake!

Gorgeous, aren’t they?  Golden & fluffy & so sweet & buttery on their own that they honestly need NOTHING added.  Nate tried them & also gave them the “thumbs-up” & I’m pretty sure these will be moving into our own rotation.

& as a snack?  I do believe they gained Harrison’s approval as well.

  4. We’ve also used canned pumpkin for pancakes. It’s really good as well.
